• 3 sweet potatoes, diced
  • 1 black pudding, sliced
  • 5 eggs
  • 5 slices smoked salmon
  • Handful rocket leaves
  • 1 bunch of thyme

  • In a saucepan boil the sweet potato until tender. Drain and mash until smooth.
  • Heat a frying pan until hot and fry the black pudding for 1 minute on each side.
  • Meanwhile poach the eggs until just set.
  • Spoon the mash onto serving plates and sit a piece of black pudding on top of each. Lay a slice of smoked salmon on top then top with an egg. Sprinkle with black pepper, garnish with rocket and serve.
