Ingredients
  • 2 x 200g Traditional Irish white pudding
  • 1 red pepper
  • 1 yellow pepper
  • 2  tsps cumin seeds
  • 400 g mashed carrots
  • juice of 1 orange
  • salt
  • pepper
  • 3 tblsp of olive oil

Method

Cut the peppers into quarters, remove the seeds and cut into strips. Pour 2 tablespoons of olive oil and the cumin seeds into a frying pan and sauté the peppers for 10 minutes on medium heat. Drizzle with orange juice and cook another 10 minutes on low heat. Salt and pepper.

Cut the white pudding into slices. Heat a pan with 1 tablespoon of olive oil and brown the slices on 2 sides. Heat the mashed carrots.

Build the timbales using a circle. Start with the carrot puree, top with slices of white pudding and then the peppers, drained. Finish with the remaining slices of pudding. Garnish with chervil and serve immediately.
