Try this recipe for Tripe and Onions, which is a classic combination.
340gm Precooked Tripe
340gm Onions sliced into rings
40gm Butter or Margarine
Salt and Pepper to taste
Wash and dry the tripe then cut it into pieces about 7.5cm square
Put the tripe and onions, milk and seasoning into a pan and bring to the boil
Melt the butter or margarine in a saucepan, stir in the flour and whisk in the tripe liquid.
Stirring continuously bring the sauce to the boil and cook for 1 to 2 minutes
Add the tripe and onions and serve when heated through
Sprinkle with chopped parsley and serve with mashed potatoes.
